Seven Quick takes, updates?

My First Seven Quick Takes. Im sure I will get this wrong. :)

Also, I got on twitter (here we go!) The ladies at #cathsorority have been awesome. I haven't felt this welcome in a long time!

Found a old friend on the blogosphere! She blogs here and writes all about the amazing summer we met! It's truly a small world out there.

I am VERY excited for this new book: The Art of Fermentation. 
Fermenting foods has been one of the most exciting things I have done in the kitchen. I have disliked science until now!

I am running out of Quick Takes. Hmmm....Father's homily this morning talked about Christian couples in some parts of Europe (England, maybe?) that are not allowed to adopt children for fear of the kids being brain washed into Christian doctrine. Not sure of his source but THIS STUFF IS REAL. The battle for the family is NOW. Get out those rosaries!

My son got into . . .

Oil! 

Here he is, happy as a peach about it. This was after trying to get it off with a rag and water. It was getting everywhere!


I quickly googled how to get oil off your skin and I found olive oil was suggested.

I then slathered him with olive oil and it came off like a charm. I rinsed him with water and vinegar to get the remaining oil off his skin, and voila! Poor babe, but he was probably thinking, "Hey, at least I got a bath out of the deal!"



Happy as can be eating his favorite muffin. He was in a clean state for all about 10 minutes. At least mud isn't toxic. :)

Stress Relief for Me!

 Sometimes my kids stress me out. I mean, maybe a little more often than sometimes! You know when they can't stop clinging or whining and it seems like you can't take it anymore? I have the tendency to yell and be mean but I know that yelling is not the answer, so what do I do?


She's so sweet and loving most times, but there are so many of these moments as well!


 I put on some good 'ol classical music! It was like magic today. As soon as I felt like the kid's behavior (which was very typical of 1 and 2 year olds) getting on my nerves I turned on Pandora and typed in Antonio Vivaldi. My 2 year old daughter started dancing around the livingroom and my 1year old boy starting playing with some toys. I felt so uplifted by the music and so did the kids. It was wonderful! I make sure to play it pretty loud so we can all enjoy Vivaldi's Four Seasons when it comes up on the playlist.

Spiced Coconut Squash Muffins

This recipe has been adapted from The Well Fed Homestead recipe. Make sure to check out her sight, she has so many wonderful recipes!

1/2 c. melted coconut oil
6 eggs
1 tsp. vanilla
1/2 c. honey
1/2 c. cooked, pureed butternut squash (or any squash for that matter!)
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. salt
1/2 tsp. baking soda
1/2 c. coconut flour

Preheat oven to 400 degrees and line muffin tin. Beat eggs, add in vanilla, honey, squash, spices, salt and baking soda. Mix together. Slowly add in sifted coconut flour and coconut oil.

Divide batter evenly between 12 muffin cups.

Bake for 15 - 19 minutes or until no longer wet. Enjoy with a huge slab of butter if you prefer!
